On Monday May 11th, right before the beginning of Asia largest bakery fair “Bakery China”, the french MOF (Best Craftman of France) baker Pascal Tepper spent a whole afternoon at SYB Baking center to give a master class to the Young Bakers.

5月11日星期一,在亚洲最大烘焙盛宴‘中国国际焙烤展览会’开幕之前,法国MOF(法国最佳工匠)面包大师Pascal Tepper 在海上青焙坊烘焙中心给学员们上了一堂大师课。

For the 7th consecutive year, Pascal Tepper generously shared his recipes for different kinds of bread with the students, such as tradition bread, country bread, sandwich bread, fruits bread, brioche… After the students wrote down the recipes in their notebook, the demonstration started and Master Baker Tepper explained all the different steps students should follow when baking various kinds of bread. He also showed them how to realize flowers and leafs from the dough to decorate the bread and the students were all really impressed by the Master Baker’s agility and creativity.

这是Pascal Tepper大师连续第七年与海上青焙坊的学员们分享制作不同面包,如传统面包,乡村面包,三明治面包,水果面包,布里欧修等等的独家秘笈。 在学员们在自己的笔记本中写下各种面包的配方之后,Pascal Tepper大师向学员们示范和解释在制作不同面包时的所有步骤。 他同时也向学员们展示了如何在用从面团制作花和叶子来点缀面包。 学员们对大师的巧手和创造力留下了深刻的印象。


At the end of the day, MOF Pascal Tepper shared his story with the students who had a lot of questions for him. He also made quite an impression on the students when he showed them the medal he received from the MOF – Meilleur Ouvrier de France – competition. Held every four years in France, this very selective competition aims at discerning the best craftsman in more than 160 categories, including bakery. Pascal Tepper received this award in 2000 by former French president Jacques Chirac and since then he has developed many activities abroad in places such as Dubai, Qatar or Abu Dhabi.

Passionate about his profession since a very young age – his father and grandfather were also bakers – Pascal Tepper encouraged the Young Bakers to pursue their careers with passion and dedication. As everyone was tasting the delicious bread baked on the day, he took a moment to remind the students the importance bread has always had and will always have in people’s diet all over the world.

Pascal Tepper 自小就对烘焙展现出了非常浓厚的兴趣—他的父亲和祖父都是烘焙师。 Pascal Tepper 鼓励海上青焙坊的学员们用热忱和执着追求自己的职业目标。当大家都在品尝当天制作的美味面包时,Pascal Tepper 再次提醒学员们面包的重要性,面包将一直存在于世界各地人们的饮食中。

A few days later, on their visit to Bakery China, the students had the chance to see MOF Pascal Tepper as he was doing demonstration on Lesaffre booth with the help of SYB bakery teachers Zhang Zhenghai and Wang Li. Both also helped MOF Pascal Tepper realize the breads for the cocktail ceremony of Fête du Pain, an event that brings together all the professionals of the French bakery industry.
