Didn’t your childhood dreams include getting locked in a chocolate factory? Mine did for sure! So it’s all starry-eyed that I accompanied Julien and Inès, the two future SYB teachers, to the chocolate factory of Valrhona! It’s in the beautiful wine-growing town of Tain l’Hermitage, in the Rhone valley (hence its name), that Valrhona produces its world-renowned chocolate. A generous in-kind sponsor of SYB, Valrhona generously agreed to give a VIP tour of its facilities to our two graduates!

难道你小时候从没梦想过置身于巧克力工厂吗?我就有过这样的梦想!所以我和张帅和金会子——两位海上青焙坊未来教师来到法芙娜巧克力工厂,开始了一次梦幻之旅。法芙娜巧克力工厂生产着世界闻名的巧克力,位于罗纳河谷美丽的葡萄种植区单-艾米达吉镇(它也因此得名)。法芙娜作为我们的赞助商,慷慨地给予我们未来的老师一次贵宾游览,参观他们的设备。

The visit started by the Cité du Chocolat, Valrhona’s recently opened but already worldwide famous museum of chocolate. We were warmly welcomed by Eugenia who guided us through this beautiful space. Julien and Inès had a lot of fun touching real cacao pods, recognizing the ingredients used in chocolate by their smell or learning how to savour chocolate! They also admired the “Archichoco” exhibition, that gathers beautiful chocolate master pieces that reproduce real or imaginary architectural creations.

Now that they knew everything (or nearly so) to the art of chocolate making, they entered the factory to see the theory applied to practice! Instead of Oompa Loompas, we found many employees focused on their task, from creating the perfect blend of ingredients to delicately adding by hand the toppings on each chocolate.

Valrhona chocolates can be used both by amateurs and by professionals. To help them make the most out of their unique products, Valrhona set up the “Ecole du Grand Chocolat” that offers top-notch trainings to pastry chefs from around the world. One of Valrhona’s pastry trainers gave us a tour of the facilities, that deeply impressed our future teachers. The two of them were thrilled by their visit: “As a pastry chef, chocolate is one of the products that I use daily, and I’m really glad that I had this opportunity to know more about it. The Young Bakers are very lucky to be able to learn using such a premium chocolate!” said Inès.
