法国大磨坊烘焙大师教授学生烘焙技艺 D. Genty from Grands Moulins de Paris Gives SYB Students a Class

3月17日,青焙坊的学生们得到了一次特殊的学习机会,来自巴黎大磨坊(GMP)的烘焙大师Genty光临青焙坊烘焙中心,为学生们亲身示范如何最大程度利用GMP面粉制作传统法式面包。

Genty出生于烘焙世家,十三岁时就开始跟随父母学习烘焙,而且他的儿子现在也已成为烘焙师。他自己开了一家面包店,经营了15年后,他转至GMP烘焙学校任教,已经工作了近20年。而今,他调至GMP国际部,每年前往二十多个国家宣传大磨坊出品的面粉,在当地烘焙学校及高端酒店传授烘焙技艺。

虽然是休息日,但听说会有法国大师来教课,学生们兴奋不已,早早地就聚集到烘焙中心。Genty带来了11款面包的配方,制成了三种法棍、羊角、布里奥、维也纳甜面包、全麦面包、米饭面包、黑麦面包。青焙坊的张政海老师解释道:“尽管几个配方制作的是同一种面包,但因为采用了不同的工艺和面粉,故风味各不相同。”

学员们十分珍惜此次学习机会,认真聆听Genty的讲解,观摩老师的手法,不时记录要点。短短一上午,有的同学已经记了满满两页纸。不过最精彩的时刻还是在傍晚时分,Genty小心地拿起今天的烘焙成果,精心摆放在长桌上。看着面包组成的美丽图案,同学们纷纷拿起手机拍照。整整八小时才制好的面包在几分钟的时间内分食一空。了解到同学们的背景,感性的Genty先生热泪盈眶,他殷切鼓励学生们坚持对烘焙的热情,期待将来在顶级酒店中见到他们,那时他们一定会成为酒店的首席烘焙师!

青焙坊的老师们也同样赞叹于这次精彩绝伦的课程。王莉老师说道:“这是我经历的最好的课程,Genty不仅仅烘焙技术高超,最难得的是他对烘焙和教学饱含最真挚的感情。今天学生了烘焙了平日两倍的面包,而且都十分美味!”

On March 17th, SYB students got a special chance to learn directly from a French master baker. Genty, from Grands Moulins de Paris (GMP), gave students a marvelous class on how to make the most of GMP high-quality French flour to bake traditional French bread.

Genty was born in a family of bakers, both his parents were bakers, and now his son is a baker as well! He started learning how to bake at the age of 13 and ran his own bakery. After working in this bakery for 15 years, he was a teacher at Grands Moulins de Paris baking school for nearly 20 years. He now works in the international department, travelling to over 20 countries a year to promote GMP flour and give baking classes to baking schools and high-end hotels.

Although it was the weekend, students gathered in the baking center early. Knowing that it was a French baking master who would give the class, they couldn’t hide their excitement. Mr. Genty had prepared 11 recipes, including Baguette, Vienna Baguette, Croissant, Brioche, Pain au Riz, Wholemeal Bread and Rye Bread. Zhang Zhenghai, our baking teacher, explained that though some bread is of the same name, yet they are of different flavors as a result of using different skills and recipes.

The students listened and observed carefully and took notes from time to time, deeply absorbed in learning. At the end of the morning, some students had written nearly two pages of words! However it wasn’t until much later in the evening that the students finished baking and that D. Genty carefully arranged the beautiful bread and pastries on a table. Students were so impressed that they kept taking pictures, and the breads that had taken 8 hours to bake were eaten in a few minutes! Deeply moved, Master Genty gave an inspirational speech to the students, telling them how touched he was to see that they shared his passion, and that he was hoping to meet them again in the future…as top baker chefs in prestigious hotels of course!

SYB teachers were deeply impressed by the class as well. As bakery trainer Wang Li said “This is one of the best classes we’ve ever had, Mr. Genty not only has amazing baking skills, but also a true passion for baking and teaching. Under his guidance the students baked twice the amount of bread they do usually, and it was delicious!”
