May is always a very active and joyful month for bakers and bread lovers in Shanghai and all over the world, as everyone gathers to celebrate la Fête du Pain (the Bread Festival) on May 16th.

In Shanghai, every year, and right before, takes place another important event, Bakery China fair, the largest of its kind for bakers and confectioners in China which rallies international participants of the food industry.

对于上海和全球的烘焙及面包爱好者而言,五月是个特别的充满欢乐的月份。因为,5月16日是面包守护神圣多诺黑的纪念日(面包节)。

近日,另一场烘焙届的盛宴——中国国际焙烤展览会,中国规模最大的烘焙和制糖产业展览会也在上海召开,此次展览会集结了来自全世界的各个食品行业企业与组织。

For the Young Bakers it is an exceptional opportunity to discover the market trends of this extremely fast-growing sector, including bread, cakes, pastries and sweets. During the visit, the students were particularly excited to visit our partners and in-kind sponsors, as they could recognize the high-quality imported products and equipment they use on a daily basis, and watch the live demonstrations.

对于海上青焙坊老说,这是一次探索面包,蛋糕,糕点和糖果等极速发展产业的市场趋势的绝佳机会。在参观我们的合作伙伴和原料赞助商的展位时,学员们表现得特别激动,因为他们能辨认出他们平日里使用的高品质进口产品和设备。他们也观看了许多现场演示。

Thus, it was a great pleasure to visit Dominique Genty at the Grands Moulins de Paris, after he generously gave aMaster class to our students at SYB baking center. The students were also extremely lucky to receive a Master Class from MOF Pascal Tepper and be able to watch his demonstration at our long-standing partner Lesaffre. They also had the chance to discover the newest oven of our in-kind sponsor Kolb and to meet other companies interested in offering free products for the students’ training, including silicone moulds manufacturer Silikomart.

因此,在Dominique Genty慷慨地为学员们上了一堂大师课之后,学员都非常高兴能在巴黎大磨坊的站台看到他。学员们还非常幸运地参与了MOF Pascal Tepper的大师课,还在我们的长期合作伙伴乐斯福亲眼观摩他的示范。他们还有机会接触到了我们的实物赞助商高比的最新款烤箱,见到了许多诸如硅胶模具制造商Silikomart等有兴趣帮助海上青焙坊的公司的展位与代表。

Although at SYB, each bread and cake is handmade from scratch, it is very interesting for the students to learn more about the bakery machines and the endless opportunities the bakery world has to offer, especially as they will soon graduate. During the visit they were able to take a glimpse at the existing but also the future of the packaging solutions, chilling and refrigeration technology, ovens and machinery for bread production.

虽然在SYB,每个面包和蛋糕是从头手工制作,但对于学员们而言,在这即将毕业之际了解到烘焙机器以及烘焙世界所能带给他们的无限机会是非常有意义,也是非常有趣的。在参观过程中,他们能够了解到现有的和未来的产品包装技术,冷却和制冷技术,烤箱器材等与面包相关的各类产业。

Moreover this year, an exceptional event took place at Bakery China: the world-wide bakery competition Coupe Lesaffre (Lesaffre Cup). Having won their respective regional competitions in March, Wang Li and Zhang Zhenghai, both bakery teachers at SYB, were competing on a national level and the SYB team was overjoyed by the results: Wang Li won the 2nd award of the artistic bread category, and Zhang Zhenghai won the 1staward of the baguette and special bread category and will be competing in the Asia-wide competition! We are extremely proud of what they have achieved and very excited about the upcoming challenges awaiting them. It is thanks to them and our partners that we are able to provide a high-quality training to our students. In June, they will both be sharing their expertise at SYB professional training session but also every month at SYBpublic classes. So join us and bake it happen!

除此之外,今年中国国际焙烤展览会上还有一特别之处:“路易乐斯福杯”全球烘焙师大赛中国赛区决赛在此召开。在三月的华东赛区比赛中脱颖而出后,王莉和张镇海,两位海上青焙坊的老师参与了这场全国范围的角逐。而最终的结果也令人惊喜:无论面包店教师SYB,是在国家层面的竞争和SYB队喜出望外的结果:张政海老师获得了法棍组全国第一,并将代表中国参加印度尼西亚的亚洲赛区竞赛,王莉老师则获得了艺术面包组全国第二名的好成绩。恭喜他们!我们为他们自从加入SYB以来一路取得的成就感到骄傲,也为他们即将面临的挑战感动激动!六月,他们将通过海上青焙坊的专业法式烘焙培训以及每月的对外公开课与大家分享自己的所学。欢迎参与!
