真是印证了“时光如剑,岁月如梭”这句话,转眼间我们就已经快要告别严冬迎来暖春,同时也即将迎来2014年的春节,对于中国人这意味着将要真正地踏入2014。在这个全中国都在迎接春节到来的时候,海上青焙坊的第六批学生也已经学习了半年的课程了。

到现在我还记得第一次见他们他们给我的感觉,青涩的、腼腆的、怯怯的。他们对上海和烘焙的所有都充满了好奇,眼睛里也透露着想要探寻新事物的欲望,那是想要学习的欲望。从他们的身上我仿佛看到了几年前的自己,对他们有着陌生而又熟悉的感觉。也记得第一次给他们上完烘焙课试吃所有产品的时候,每个同学都对法式面包的代表产品法棍和乡村面包表现出了排斥,因为从来没有吃过那么硬的面包所以接受不了。而现在的所有的同学只选择吃法式面包。我觉得这是我们成功的第一小步,因为从事一个行业就要喜欢自己的工作。对于烘焙师来说是要爱上面包,这一点,我们的学生做到了。

当然,我们的学生这半年不只是学习了烘焙。由于我们的学生都是因为家庭的原因没有机会获取更多的知识,所以我们安排了一些英语课、生活技能课。通过这半年的学习,他们的英语水平提高了很多。有时候在上烘焙课的时候从嘴里出来的是英语,这让我意外也让我惊喜。

通过这些课程的学习和在海上青焙坊这个大家庭的熏陶,学生们的性格上也发生了很大的变化。那些以前害怕和人接触的同学现在也慢慢的建立了自信,会主动和人交流;那些以前总是以自我为中心的同学也开始关心身边的人了;那些卫生习惯不是很好的同学现在也慢慢的爱干净了;那些上课喜欢有小动作的同学现在上课也开始认真了。在实习的过程中碰到问题也会自己解决了。

作为他们的烘焙老师,看到他们的进步我非常感动。虽然在技术上他们还处在初级阶段,难能可贵的是他们每个人的学习态度都是非常积极的,这是做所有事情的基础。技术不是说用一年的时间好好学就可以学的非常好,这个是需要自己的勤奋努力和长时间的经验积累。

通过这半年的授课我很荣幸的见证了他们的成长:从对烘焙完全不了解到现在认识所有的烘焙原料、烘焙设备。甚至是对整个烘焙行业,他们也都有了大概的了解和简单的认识,我深深地相信在海上青焙坊的帮助下和通过他们自己的努力,他们每个人都会有一个很美好的未来。

How time flies! In the blink of an eye, we are going to say goodbye to the severe winter and welcome the warm spring as well as the 2014 Spring Festival. For Chinese people, this is the moment where we really enter 2014. At that time of the year when all Chinese are welcoming the Spring Festival, the 6th batch of SYB students has already studied bakery for half a year.

Up till now, I can still remember the impression they left on methe first time I saw them, I thought they were green, shy and timid. They were curious about everything related to Shanghai and bakery, and you could see in their eyes their desire to learn new things. It was the desire to learn. It was as if I saw myself a few years ago, so they both appeared unknown and familiar to me. I also remember the first time we tasted all the baked products after the first baking class. None of the students liked baguette and country bread, the representative products of French bakery, because they had never tasted that kind of hard bread. However, now all the students will only choose to eat French bread. I think this is the first step of our success because when you choose to enter industry you should like what you do. For bakers, they should like bread, and our students have succeeded to do this.

Of course, in the past six months, our students haven’t learned bakery only. Since our students did not have the opportunity to further their studies because of their families’ situations, we have arranged English lessons and life skills lessons for them. Through these classes, their English has improved a lot. For example, they would sometimes surprise me by saying English words during baking classes!

Thanks to these classes and the influence of in the big SYB family, their personalities have changed a lot as well. Those who were afraid of human contact are gaining confidence and nowcommunicate with others pro-actively. Those who only cared about themselves have begun to care for people around them. Those who didn’t have a very good hygiene will keep themselves neat and clean now. Those who liked playing during classes have begun to listen carefully. Besides, they now deal by themselves with the problems they encounter during internships.

As their bakery teacher, I am deeply moved by their progress. Although their techniques are still at the primary stage, what is valuable is that every one of them is motivated to study, which is the basis to do anything else. Techniques cannot be fully gained in one year only. It requires hard work and long-time experience.

I’ve been honored to witness their growth for the past six months: from knowing nothing about bakery to knowing all the baking ingredients and equipments, and even have a basic knowledge of the whole bakery industry. I firmly believe that with the help of Shanghai Young Bakers and their own efforts, every one of them will have a bright future.
