On Sunday, March 1st, eight children sponsored by Chi Heng Foundation participated in a Shanghai Young Bakers baking class featuring pain au lait, a type of brioche, and cookies. As Chi Heng Foundation is not only Shanghai Young Bakers umbrella organization and longstanding partner, but also the main entity to recommend students for Shanghai Young Bakers’ vocational training program, the connection the children made with SYB during the class could have a major impact on their futures.

Chi Heng Foundation’s mission is to “fund and operate projects in education and care for children and adults impacted by AIDS, AIDS prevention and anti-discrimination”.  Every year Chi Heng Foundation recommends more than half of Shanghai Young Bakers’ students, and they go on to lead successful careers as bakers, serving as inspirations to their communities.

The week of the SYB baking class was a day of firsts for the Chi Heng- sponsored children. They were in the city for the first time on a group field trip that took them to famous Shanghai cultural sites such as the Shanghai Museum and the Bund. They were cooking French-style bread for the first time. And during the lunch break, students encountered traditional French quiche for the first time, while taking inaugural stabs at using Western style silverware to eat it.

After lunch, the children took creative license with their baked goods, cutting out cookie dough shapes of flowers, birds and bunnies alike. The brioche dough was subject to more free form molding, some students opting to create small mice with chocolate chip eyes rather than the traditional braided shape.

The Chi Heng children’s baking class in Shanghai was a meaningful part of their first trip to the city. It not only gave them the chance to experience French baking, but also introduced them to a charity program they have the opportunity to apply for in the coming years.

After connecting with SYB graduates and current students from the children’s own hometown Henan province, we hope they can continue sharing about their experience when they return home. We look forward to maintaining this connection and receiving more application from this area in the future!
