At the beginning of the new year, under encouragement and support of teachers and classmates, 30 SYB students walk out of school and head to new chapiter of their life. 

扬起理想的风帆,昂首向前迈步……岁末年初之际,在同学们互相鼓励声中,30名海上青焙坊的学生,走出了校门,走向了人生新阶段。

Charity program of bakery training launched by 12 French volunteers

In 2008, 12 French in Shanghai realized a lack of qualified bakers in this metropolis, and meanwhile, they saw a social issue of the lack of access to education and training for rural impoverished Chinese youths who are orphans or whose parents are disabled, ill or convicts. Facing livelihood difficulties, those Chinese youths are not able to find a stable job as they don’t have qualified skills. Therefore, SYB was officially launched by a group of 12 French volunteers to provide 30 Chinese youths, aged from 17 to 23, with one year high quality training in bakery and pastry. Both bakery training and accommodation are free of charge.

With the support of Shanghai Charity Foundation and other organizations, To this day, SYB has already trained more than 150 graduates.

12名法国人创立公益培训学校

2008年,12名在沪工作的法国人发现,尽管上海是中国的大城市,但合格的法式面包烘焙师却很少。同时,他们看到,一些孩子、尤其是来自中国偏远地区的孩子,由于家庭原因,或父母亲早逝、或家人患重病、残疾等,早早地辍学。他们因为没有技能,难以找到稳定的工作。于是,这12位来自法国的志愿者便在上海创立了海上青焙坊。青焙坊每年招收来自困难家庭的17至23岁中国青少年30名左右,免费传授烘焙技能,培训期一年,一年内学生的食宿也免费提供。

迄今,在上海慈善总会等公益部门帮助下,海上青焙坊共培育了150多名学生。

SYB graduates lead independent lives after graduation

The program is a one year training that includes French bakery & pastry, Chinese pastry classes, life skills classes and English oral classes. Students’ classes alternate between French bakery & pastry classes and their internships in prestigious 5 start hotels.

With the high demand for qualified bakers in Chinese market, each year, 30 SYB graduates embrace the new chapter of their life as skilled bakers, with the abilities to lead independent lives and support their families.

Up to present, SYB has more than 150 graduates, the majority enter five star hotels, bakeries, and of bakery related business.

Graduate Xiao He works in Lesaffre as trainer, he assists in product testing and training-related work. From last year, his workplace is no more confined in Shanghai, Xiao He was assigned to different cites to provide consulting service and technical support.

学员毕业后全都自食其力

海上青焙坊的学员们在为期一年的培训中学习诸如法式烘焙、西点,中式烘焙、生活技能、英语等课程,并在五星级酒店进行实习。

在中国市场对于烘焙师需求日益增长的大背景下,海上青焙坊每年毕业的30位学员都能以面包师或西点师的身份开启他们崭新的人生新篇章,得以自力更生、养家糊口。

至今,海上青焙坊已经有150多名毕业生,他们中既有进入烘焙相关的企业(如面包原料生产公司)工作的,也有选择在国际星级酒店和面包房工作的。

其中还有做培训师的。在乐斯福工作的毕业生小何,目前在上海烘焙中心负责协助测试和培训工作。去年,他的工作已经不局限在上海,公司也派他到不同的城市提供技术服务。  

Accompanied by social supports

“Everything we accomplished up to today could not happen without social supports”, said Cécile, Executive Director of SYB.

I asked her how I should understand ‘social support’, “Shanghai Charity foundation and many other NGOs give SYB financial support, Professional Training Center of Shanghai Caoyang Vocational School provide us a baking center and students’ dormitories. Yeast producer Lesaffre supports SYB technically and financially by sponsoring the salaries of the SYB bakery trainers and providing working opportunities for our students,” as she said.

At the end of the interview, Cecile told me that all the initiators of SYB have already left China, today SYB is taking shape, but it still faces a number of difficulties. SYB has to cover all the expenses for their 30 students each year, including training, accommodation, various activities and outings. That’s why each year SYB team strives for new partnerships.  

SYB hopes to lead the program to a more stable and sustainable path through their efforts.  From 2011, SYB offers French Baking classes and team building activities for companies and institutions. SYB students will also sell the French breads and pastries at weekend markets, with help from volunteers. “We will adhere to the very beginning mind in spite of difficulties”, said Cecile

每一步都离不开社会支持

“青焙坊创办至今的每一步,都离不开社会的支持!”负责青焙坊的法国人高希希女士说。

我问她怎样理解社会支持。她说诸如上海市慈善基金会等社会组织和企业对这个项目给予资金上的支持与帮助。曹杨职业学校为学员们提供中式烘焙教学以及宿舍。世界最大酵母生产商乐斯福不仅是主要赞助商之一,还派遣公司的高级技师为学员授课,并为部分毕业生提供就业机会。

在结束采访时,高希希告诉我,由于此前几位发起该项目的法国人陆续回国,如今初具规模的海上青焙坊也面临着不少难题与挑战。海上青焙坊需要负担所有30名学员在上海一年培训的所有开销:包括烘焙培训、饮食住宿、平日出行等等,需要不小的费用支持。因此,海上青焙坊的团队每年都不停为寻找新的赞助伙伴而奔忙。

为了能够应对困境,海上青焙坊从2011年开始了面包篮子预订、面包甜点供应、对外烘焙课程和专业法式烘焙培训等商业活动,以尽可能在资金困难时仍能依靠自身维持财政稳定。  

“路再难走, 我们也会走下去!”青焙坊负责人高希希说。
