This Master Class features two innovative recipes, tiger bread with rose and cereal bread with cheese, through which you will master essential bakery theory in a professional baking environment. This intensive class is specially designed for the professionals and bakery enthusiast with both practical and theoretical components.

In this class, you will learn innovative recipes of: 

–       Tiger Bread with rose flavor

This special French bread has a unique tiger stripes baked onto the surface; it requires specific technique of using a special paste to create the cracks during the baking process. This innovative bread has not only a distinctive texture with its crusty exterior and soft interior, but also a refreshingly sweet taste with a firm rose aftertaste.

 

在这节大师课中,你将会学到富有创意的配方: 

–       玫瑰风味虎皮面包

这款造型特别的法式面包有着老虎的条纹,这需要一种特殊的技巧使其在烘烤过程中表面自然创造出这些纹路。这款独特的面包外皮稍硬,组织细腻绵密,有着淡淡的甜味和玫瑰的香气,十分诱人。

–       Cereal bread with cheese

With cheese added into the traditional cereal bread, this special recipe is a combination of typical French taste. This bread has rich flavor, crispy crust and soft interior. A classical recipe revisited.

These imaginative recipes combine different techniques and bakery theory, which will give you more possibilities and take you on a journey to professional French bakery. 

–       奶酪谷物面包

将奶酪加入传统的谷物面包,这款配方汇聚了法国人挚爱的口味。它有着层次丰富的风味和口感,外皮脆而中间柔软,是经典配方的再次创造。

这些富有想象力的配方集合了许多不同的烘焙机器和理论知识,让你在课后可以举一反三,给法式烘焙带来更多的可能性,并引导你如何在专业烘焙中将传统与创新结合。

This upgraded Master Class offers:

–       prolonged practice hours (9h)

–       enriched theory class

–       innovative recipes created by our Chef

You will gain professional knowledge and skills, by learning:

-how to use fermented dough

-how to create high-quality bread using dough with high water content

-how to combine tradition and innovative methods in bakery 

升级后的大师班课程会带来:

The upcoming master classe is taught by expert baker Zhang Zhenghai, former SYB student who furthered studies in France. In 2015, he won first prize of baguette and special bread in Asia in Louis Lesaffre bakery cup. In February 2016, he competed within Chinese team in World Bakery Cup held in France and came back with fourth prize.

这些大师班课程都由SYB的专业烘焙师张政海老师授课,他是SYB的第一届毕业生,后在法国深造,在2015年获得乐斯福杯烘焙大奖赛亚洲区法棍和特殊面包的冠军,在2016年2月,张老师和中国队一起参加于法国举行的烘焙世界杯,并取得了第四名的好成绩。 

Also you will also contribute directly to the charity program run by SYB to lift lives of marginalized youth by providing them with one-year free vocational training of bakery.

参与课程同时也是对海上青焙坊慈善项目的直接支持,我们向困难的青少年提供一年免费的法式烘焙培训,帮助他们自力更生,找到工作。 

Location: Shanghai Young Bakers Baking Center, Suide Road, Putuo District, Shanghai

Price: 1200 yuan/ person (lunch included) for each Master Class

We limit the class to 12 people to ensure high-quality training.
