Julien and Inès visit the newly-opened Carrefour supermarket at Villeneuve la Garenne

On the 18th June, Carrefour Foundation organised a visit of their supermarket in Villeneuve-la-Garenne, which opened less than 2 months ago, for Jin Huizi (Ines) and Zhang Shuai (Julien).

Led by Sylvain Belkhiter, the supermarket director, and Christophe Fraczkiewicz, in charge of the bakery department, Zhang Shuai and Jin Huizi explored the spacious kitchens behind the bakery and pastry counters and learnt about Carrefour’s techniques to deliver quality products to large numbers of customers.

They heard how, out of the thousands of clients coming to Carrefour Villeneuve (5,000 on an average weekday and 10,000 on an average Saturday), more than half bought something from the bakery and pastry sections, which tries to recreate the traditional market feeling by providing over the counter service. At Carrefour Villeneuve, all the breads and most of the cakes are made in-house, by qualified bakers and pastry chefs who use large, top-end equipment and follow the processes manually to ensure high quality products.

“The pastry products are quite original and very carefully made,” remarked Jin Huizi as she looked at the World Cup-coloured eclairs and mini strawberry tarts.

Zhang Shuai was especially impressed by the 9-kgs brioches, and happily asked all types of questions in French to the bakery chef about the ingredients, processes and organisation.

It was extremely inspiring for Zhang Shuai and Jin Huizi to meet such passionate industry leaders, and to witness first-hand the standards that Carrefour stores in China move towards.

6月18日,家乐福基金会为张帅和金会子安排了一次前往位于新城沃伦的家乐福参观,这家家乐福门店在开张还不到两个月。

在超市经理Sylvain Belkhiter和烘焙部门负责人Christophe Fraczkiewicz的带领下,张帅和金会子参观了面包西点贵台后面宽敞的厨房并学习了家乐福为他们大批客户递送产品的专业知识。

他们知道了,原来在数以千计的家乐福沃伦点的顾客中(工作日平均人数为5000,周末平均人数为10000),超过一半的顾客都会在烘焙和西点区购买产品。家乐福的面包西点区正在尝试通过提供柜台式的服务来颠覆传统的服务模式和顾客感受。在家乐福沃伦店,所有的面包和蛋糕都是由高资质的烘焙西点大厨亲手制作。他们在先进的仪器的帮助下手工完成整个制作工艺,以保证高质量的产品。

“这些西点都非常独创和精致。”金会子看着被装饰城世界杯颜色的手指泡芙和迷你草莓挞时说道。

张帅则对那个9千克重的布里奥印象深刻,并且用法语高兴地向大厨询问了它的原料、制作流程和内部组织。
